黄梨饼 Pineapple Biscuit

Ingredients

For Pastry
250g butter
80g   icing sugar - shifted
2      egg yolks
Pinch of salt
400g flour - shifted
30g   custard powder - shifted
1 egg yolk - for glaze
300g  pineapple filling

Method
1.Cream butter and icing sugar until light, beat in egg yolks gradually.
2.Stir in shifted flour, custard powder and salt, mix into soft and non-sticky dough.
3.Take a small piece of dough, wrap in a round piece of pineapple jam. Shape into desire shapes.( I roll it on plastic agar-agar knife with stripe pattern.Refer picture below.)
4.Brush some egg yolk on surface, bake in preheated oven at 170c for 20-25 minutes.

For Pineapple filling
500g Grated Pineapple
255g Sugar

Method
1.Cook grated pineapple and sugar over moderate heat until it begins to boil.
2.Lower heat to simmer until mixture is almost dry and thick.
3.Keep stirring all the time, take about 45mins.
4.Remove and cool completely before use.


材料


面团
250克 牛油
80克   糖粉 - 筛过
2粒     蛋黄 
少许   盐
400克 面粉 - 筛过
30克   蛋黄粉 - 筛过
1粒     蛋黄 - 上色用
300克 黄梨馅


做法
1. 牛油和糖粉打至轻法,慢慢加入蛋黄
2.拌入面粉,蛋黄粉及盐,揉成柔软不黏稠的面团
3.取出一小份面团,包入一小粒黄梨馅,搓成自己喜欢的形状。(我用塑料燕菜刀(有条纹)做成格子的图案,燕菜刀请看下图)
4.扫上蛋黄液,预热烤箱以170度烘20-25分钟即可

500克黄梨丝
250克 糖


做法
1.以中火煮黄梨丝及糖至开始滚,转小火再煮至略干及浓稠不停搅拌,约45分钟,取出,待完全冷却才用。
