烧卖 Siew Mai

材料                                             Ingredients
300克半肥瘦碎肉                       300g half lean and fat pork mince
300克虾肉                                   300g prawn meat
10粒马蹄                                     10 water chestnuts
2 粒熟咸蛋黄                              2 steamed salted egg yolks
40张云吞皮                                 40 wantan wrappers

调味料                                         Seasonings
1小匙盐                                       1 tsp salt
1/4 小匙胡椒粉                           1/4 tsp pepper
1/2小匙麻油                                1/2 tsp sesame oil
1小匙糖                                       1 tsp sugar
1小匙鸡晶                                   1 tsp chicken stock
1小匙米酒                                   1 tsp chinese cooking wine
2大匙薯粉                                   2 tbsp tapioca flour

做法
1.虾肉用少许盐及一小匙薯粉拌匀后用水洗干净,用布吸干水分后切粒。将马蹄切碎。
2.猪肉和虾肉加入盐用力搅拌至起胶后加入马蹄粒及全部调味料,拌匀。放入冰箱冷藏1-2小时才用。
3.云吞皮修成圆形,用一片云吞皮包馅料,揉成烧卖形,其余照做。
4.熟咸蛋黄压碎,每个烧卖面上加一点,大火蒸10分钟左右即可。

Method
1.Rub prawn meat with a little salt & 1 tsp tapioca flour, rinse with water until clean.Pat dry with kitchen towel & cut into small cubes. Cut water chestnuts into small cubes.
2.Combine minced pork, prawn meat, salt and mix until very sticky. Add water chestnuts, seasoning and mix well. Chill in the fridge for 1-2 hours before using.
3.Trim wantan wrappers into rounds and wrap up some filling. Shape into siew mai.
4.Mash the salted egg yolks and put a little on top of siew mai. Steam at high heat for 10minutes.
